Food Trends for 2015

Restaurants Canada released its 6th annual Canadian Chefs Survey, which polled more than 400 professionals in January. Topping the list of “Hot Trends,” which are considered at the peak of popularity is craft beer and mircobrews. Here are the top 10 trends for 2015:

  1. Craft beer/ microbrews
  2. Locally sourced foods
  3. Leafy greens
  4. Food smoking
  5. Charcuterie/house-cured meats
  6. Gluten-free/food allergy conscious
  7. Quinoa
  8. Sustainable seafood
  9. Inexpensive/underused cuts of meat
  10. International sauces

The survey also identified up-and-coming trends: International/street food inspired appetizers:

  • Ancient grains
  • Uncommon herbs
  • Non-wheat noodles or pasta
  • Fewer choices on the menu
  • Natural ingredients / minimally processed foods
  • Fermenting
  • Natural sweeteners
  • Family-style dining
  • Vinegar / flavoured vinegar / house-made vinegar
