- 1 whole wheat pita shell
- 1 large tomato
- Pinch of oregano
- 1 Tbs olive oil
- 1/2 cup (125 ml) sliced mushrooms
- 1/4 cup (50 ml) red onion, cubed
- 1 1/2 cup (375 ml) feta
- 1/2 cup green pepper, cubed
- 1/2 cup red pepper, cubed
1 large tomato, thinly sliced
Preheat broiler to 450°F (230°C) or high and place rack in middle of oven. Place tomatoes, olive oil and oregano in a bowl and microwave on high for 1-2 minutes. Stir with a fork. Place pita on a pizza pan, pizza stone or cookie sheet. Cover with sauce. Add mushrooms, onion and peppers. Season with oregano. Crumble feta over top and season with your favourite dried Italian herb. Bake for 5 – 10 minutes.
